Recipe by Mark Avery, head brewer at Two Weeks Notice Brewing Company in West Springfield, MA. Pub Ale Mate! is Mark’s tribute to Bass Ale, which he says he always considered a British IPA, adding that his use of Chevallier malt in the grist was inspired in part by our previous episode and recipe for Storm in a Teacup Barleywine

Pub Ale Mate! British IPA Homebrew Recipe

As with most recipes we received from professional brewers, Mark provided the ingredients mainly in percentages (for malt) and IBUs (for hops). The idea being with those numbers you should be able to scale the recipe to whatever volume you choose using brewing software.

OG: 1.055-1.057
FG: 1.010-1.012
ABV: 6%
IBU: 60

Malt

  • Crisp Chevallier Malt (85%)
  • Crystal 120 (5%)
  • Biscuit Malt (5%)
  • Crystal 60 (3%)

Hops

  • Apollo – 60 minutes for 50 IBU’S
  • East Kent Goldings – 10 minutes for 9 IBU’S
  • U.S. Challenger in dry hop (1 lb per bbl or 0.5 oz per gallon [2.5 oz for five gallons])

Yeast

Process

Mash grains at 154F for 60 minutes.

Run off and collect wort in boil kettle.

Boil for 60 minutes, adding Apollo and East Kent Goldings boil hops at times noted above.

Chill wort to 60F and pitch Imperial Yeast A09 Pub. Fermented at 64F.

When fermentation is complete, dry hop beer with U.S. Challenger hops at a rate of 0.5 oz per gallon (2.5 oz for standard five-gallon batch) at 60F. Let rest for 3-5 days. Package beer and enjoy.
